Single Serving Veggie Egg Toast

I love all forms of eggs and toast…

So, here is a super simple recipe I sometimes like to start my mornings off with!

Note: I used a Cast Iron Skillet and instead of oil I simply used water. The natural flavors and sugars from the veggies caramelized perfectly on their own!


  • 1 Slice of Bread (I used Ezekial Bread)
  • 1 Egg
  • 1/8 Sweet Onion (Chopped)
  • 1/8 Bell Pepper (Chopped)
  • 1 Crimini Mushroom (Chopped)
  • 1/4 Avocado (Sliced)
  • 1/4 tsp Garlic (Minced)
  • 1/4 Avocado (Sliced)
  • 1 Tbsp Tandoori Sauce (Recipe Here)
  • Red Chili Flakes (to taste)
  • Pepper (to taste)
  • 3 Basil Leaves (Chopped)
  • Water

How To:

  1. Heat skillet over medium-high heat. Once hot, add 1 Tbsp of Water.
  2. Add Diced Onions and Bell Peppers and saute until caramelized, adding 1tsp of Water as it evaporates so they don’t completely stick to the pan.
  3. Once caramelized (5-10min) add Mushrooms and Minced Garlic and saute (5min).
  4. While veggies are cooking, toast your bread.
  5. Remove veggies from skillet, add 1tsp of Water and crack Egg onto skillet.
  6. As the Egg fries (5-8min) coat your toast in Tandoori Sauce and add Veggies and Basil on top.
  7. Once Egg is fried, add to the toast and season with Chili Flakes and Pepper.
  8. Devour.
